The completely ground and tubed sausage. Unfortunately, I never got a chance to eat any of this since we left the next morning and it had a long day of slowly smoking ahead of it. I can say that it smelled delicious though. Enjoy!

Wow, how long did it take you to make? Photographically-wise, I like how the sausage are looping into one another not perfectly.

@Ben: Well, that day included about 40 or 50 pounds of sausage for various people, so it was a whole day affair. Each individual coil was about 5 pounds and took around half an hour.
'nice' shot, (uncooked meat always makes me feel a little funny). Cook it and post the 'after' image!

@Duncan Galbraith: Thanks, and I would but I dont have any of it to cook! But what's the problem with meat that isn't cooked?
I, too, like the coil-iness of the sausage, especially with the sound edge of the pan.

Great series - I enjoyed seeing it all come together! Not sure why raw meat creeps out Duncan - he lives in Japan - home of Sushi - raw fish!!

@Jason Kravitz: Thanks very much! And I'm not sure about the meat thing either, but everybody has at least one or two things that they don't like to see. Oh well, the raw meat is finally done with so nobody has to worry about that anymore!
